Not sure why it took me so long to hopon the overnight oats bandwagon, but now that I’ve discovered their brilliance, I’m fully hooked. For the uninitiated, making overnight oats requires little more than stirring together a few ingredients then letting them sit in the fridge overnight, and when you wake up in the morning, breakfast is served. No dicing, no blending, and most importantly, nocooking, which is deeply appreciated in the 100 degree July heat we’re experiencing in Austin right now.
For any of y’all that still think oatmeal is, well, oatmeal, you most definitelyhaven’t tasted my versions brimming with fruit, spices, zest, and nuts. Blueberry Muffin Overnight Oats
Serves 1
The Breakfast Recipe That'll Save Your Morning

Ingredients
- 1/2 cup old-fashioned oats
- 1 teaspoon chia seeds
- 1/3 cup frozen blueberries and/or pomegranate seeds
- 1/4 teaspoon vanilla extract
- 1/4 teaspoon cinnamon
- 1 teaspoon maple syrup or honey
- lemon zest
- 3/4 cup almond milk (I like to use vanilla-flavored)
pinch of salt - top with: Whole Natural Blue Diamond Almonds
Instructions
- Toast the oats on a baking sheet in a 350-degree oven for 10 minutes (this is a bonus step, but makes the oats so much better!)
- Combine everything in a jar, shake it up, and refrigerate overnight. In the morning, top with almonds, and your oats are ready!

Hi…. Love to try your recipe above. But could I use soy milk instead of almond?? I live in the part of Indonesia where almond milk is not a commond thing. And almond itself is also a challenge to find. Thanks

Can you use whole grain oats for this? Will they “cook” enough during the night?

Hi Amelie! Look for “old-fashioned” or “rolled” oats for this – they are whole grain. Steel-cut or Irish oats won’t work for this since they need actual cook time to reach the right consistency. 🙂

Hi! Yes, simply allow the oats to cool completely and store them in an airtight container in the fridge. Your oats will keep for a few days.
