With Mother’s Day coming up this weekend, I thought now would be a good time to share my newest breakfast-prep obsession. It’s a different take on an overnight French toast bake, topped with sweet peaches that are laced with vanilla and cinnamon.

I like to make this on the weekend, then save the leftovers for a quick breakfast throughout the week. It gets better as it sits and reheats beautifully.

Even though is a simple dish, Peach Cobbler French Toast Bake is impressive enough for a brunch spread. Perfect for Mother’s Day!

How to make peach cobbler french toast bake

I’m not a morning person at all, so I’m a fan of breakfast/brunch dishes that can be prepped the night before.

Just cut up some French bread, spread out in a casserole dish, and top with a slightly sweetened vanilla/cinnamon custard base. Then, cover and refrigerate so that the bread soaks up most of the custard.

This is also a good time to place your frozen peaches in the refrigerator to thaw. You could even make the streusel mixture the night before and refrigerate it in a separate dish. The next morning, all you have to do is let the casserole come to room temp, top with the peaches and streusel, then bake!

If you’re not a fan of peaches, just about any frozen fruit will work great. Mixed berries would be phenomenal. Think of it like an actual cobbler–cherries, apples, blueberries. Any of those would work.

I haven’t tried this recipe with fresh fruit yet, but I’m sure that could work. Just make sure your fresh fruit is ripe and in-season, so that it is as sweet as possible. Frozen fruit is picked and frozen at its peak, so it doesn’t need much added sugar to make it sweet.

If you want to transform this into a even sweeter dessert, you could top it with whipped cream or ice cream. Heavenly! I just went with some light pancake syrup.

Ingredients

  • 10 oz challah or French bread, cut into large chunks
  • 24 ounces frozen sliced peaches, thawed and drained (or use any fruit you want)
  • 1 1/4 cups almond milk*
  • 5 eggs
  • 1/4 cup granulated sugar
  • 1 tsp vanilla extract
  • 1/2 tsp ground cinnamon
  • 1/4 tsp kosher salt

FOR THE STREUSEL TOPPING

  • 1/4 cup all-purpose flour
  • 1/4 cup brown sugar
  • 2 tsp light butter
  • 1/2 tsp ground cinnamon

Instructions

  • Grease a 13×9 casserole dish with cooking spray. Lay your bread pieces evenly over the bottom of the dish.

  • In a medium-sized bowl, beat together eggs and sugar. Add in the milk, vanilla, cinnamon, and salt. Continue to beat until fully incorporated.

  • Pour egg mixture over entire casserole and push down on bread with your hands, making sure bread is covered in the mixture.

  • Cover and refrigerate for at least a few hours, or overnight for best results.

  • When you're ready to cook, preheat oven to 350 degrees. Take the casserole out of the refrigerator and let sit at room temperature.

  • Place thawed peaches evenly over on top of the soaked bread (see pictures).

  • Make the streusel topping. In a small bowl, mix together flour, brown sugar, butter, and cinnamon with your fingers until a crumbly paste forms. Sprinkle the streusel evenly over the peaches.

  • Bake uncovered for 45-60 minutes, or until the bottom is golden brown and the egg mixture is set. Let cool for about 10 minutes before you cut your portions.
